If gelatin is stored in a tightly sealed poly-lined container in normal indoor conditions, it will remain stable indefinitely. It can be re-tested annually to insure that it has maintained its integrity. The only exception would be is if the gelatin is kept in a heated space above 113ºF (45ºC) with relatively high humidity (above 60 % RH). In this extreme scenario, the gelatin would gradually lose its ability to swell and dissolve. If an expiration date were required, we would list 3 years from the date of manufacture.
